Members of the public need to fulfil certain procedures in matters related to food safety and ways to reduce the risk of diseases. According to a Senior Health Officer from the Food Safety and Quality Control Division, Health Services Department, there are several measures that need to be taken to ensure that the meat which will be distributed during Hari Raya AidilAdha are clean and safe for consumption.
According to DayangMahaniBinti Haji Muhammad, the first measure is to ensure that the area which will be used to handle the meat, which are usually outside mosques or private residences, including the equipment are clean. Hands must also be washed for 20 seconds with soap and warm water before handling the meat and then dried with clean towel or tissue. Proper apron must be used to protect clothing. She added that cut meat must be stored in a plastic food storage container, and stored separately with other foods. Meat preparation surfaces must then be washed with hot water and soap to kill any bacteria. Hands must be washed again and any rubbish disposed of.
The World Health Organisation, WHO, advises 5 main keys to safer food preparation namely, Keep clean; Separate raw and cooked; Cook thoroughly; Keep food at safe temperatures; and Use safe water and raw materials. According to DayangMahani, the cut meat should be distributed as soon as possible and not be left too long at room temperature. The raw meats need to be stored in Cool Boxes containing ice packs to ensure that the microbial load is low and prevent the meat from being spoiled while being distributed or in transport. The meat should also be stored on the bottom rack of refrigerators or freezers to prevent any blood from dripping and spoiling other food.
